I have an excuse to leave the house today – I made a sale on Mercari! It’s just a little bottle of nail polish, but I get to take it to a blue box and drop it off! How fun. Staying inside the car at all times, but I get to go out!
I made Thai for dinner. Super yummy and very easy. I cooked some chunked chicken in coconut oil and then used THIS as a curry base and mixed it with a can of coconut milk. Then I added some potato, carrots, red bell pepper, and onion (loosely following THIS recipe) and let it simmer for about 30 minutes. We served it on rice and everyone liked it. Yes, even the little guy ate it. Win!
Our little guy was not very good today. He argued about everything and ended up getting sent to bed early.
The big excitement for the day is my husband made some really awesome artisan bread. Here are some photos:
The whole bread making process went smoothly with the exception of the house alarm going off yesterday – during naptime – while he was seasoning the vintage pan he picked up from mom. <sigh> Today we woke up to the delicious scent of baking bread. Yes, we had it for breakfast. And with our turkey sandwiches at lunch. It’ll be gone by the end of day tomorrow.
Emotionally, I think we are all holding up okay. I fully believe the warmer weather is helping tremendously with our attitudes. Plus being able to go outside and poke around in our backyard helps a lot as well. We got some basil and cilantro planted after naptime when the little one went out for his outdoor time.

- There should be an influx of test kits to our state soon and we will probably see a big jump.
- Not much else is being reported that is of interest. Same old stuff is being regurgitated.
